The Small Details Behind Authentic Thai Cooking

The Small Details Behind Authentic Thai Cooking

One of the most fascinating things about Chef June is that she was never formally trained as a chef. She never attended culinary school, worked under celebrity chefs, or spent years in commercial kitchens. Yet the depth of flavour and balance she creates in her cooking continue to surprise even those closest to her.

At Thong Thai Bistro, many conversations with Chef June reveal just how detailed and thoughtful authentic Thai cooking can be.

According to Chef June, even something as simple as black pepper has a correct timing during cooking. Add it too early and the aroma fades away into the dish. Add it too late and the flavour becomes harsh and disconnected. For her, every ingredient has a purpose, timing, and balance that affects the final outcome of the food.

Another interesting belief Chef June strongly shares is about chilli fish sauce — something many diners automatically request when eating Thai food.

According to her, chilli fish sauce should mainly accompany dishes like Thai fried rice rather than being poured over every dish on the table. She believes adding fish sauce onto carefully balanced curries, stir-fries, or soups can overpower and alter the intended flavours created by the chef.

If diners prefer more heat, Chef June believes raw chilli is the better option because it increases spiciness without changing the balance of the dish itself.

These small details may seem surprising, but they reveal something important about authentic Thai cooking: great food is often built on tiny decisions most people never notice.

At Thong Thai Bistro, Chef June’s cooking is guided not by formal culinary education, but by instinct, tradition, memory, and years of experience preparing Southern Thai food the traditional way.

Sometimes the smallest details make the biggest difference.

Hospitality, Friendship, and a Bottle of Vodka: The Story Behind Service at Thong Thai Bistro

Hospitality, Friendship, and a Bottle of Vodka: The Story Behind Service at Thong Thai Bistro

When people think about restaurant service, many imagine polished fine dining, formal greetings, and perfectly rehearsed hospitality. At Thong Thai Bistro, we see things a little differently.

We are not a luxury 5-star hotel restaurant, and we do not pretend to offer that style of service. What we try to offer instead is something far more personal — genuine warmth, kindness, laughter, and human connection.

The heart behind much of this comes from Indi, who has been serving Thai seafood since 2013 during his years in Phuket, Thailand.

Back then, the restaurant was more than just a place to eat. Over time, many diners became genuine friends. Guests would return year after year, not only for seafood but also for the conversations, laughter, and relaxed atmosphere that naturally developed around the table.

Once Indi got to know returning guests, dinners often became more informal and memorable. Sometimes guests stayed long after their meals had finished. Stories were shared, friendships were formed, and somehow bottles of vodka would magically appear at the table 🍻

It became less about “customer service” and more about creating an environment where people felt welcomed and comfortable.

At Thong Thai Bistro, we still carry that same philosophy today. We believe hospitality is not about acting important or pretending to be perfect. It is about treating people the way we ourselves would like to be treated — with sincerity, warmth, humour, and generosity.

Of course, being a family-run restaurant also means things can sometimes feel lively and imperfect. Conversations become loud, laughter spreads across tables, and occasionally someone gets convinced to stay for “just one more drink” 😄

But perhaps that is exactly what makes the experience feel real.

For us, great hospitality is not measured only by polished service standards. It is measured by whether guests leave feeling happier than when they arrived.

Sometimes true friendship begins over a simple meal — and sometimes over a bottle of vodka.

The Work Behind Authentic Thai Food: Why Quality Matters at Thong Thai Bistro

The Work Behind Authentic Thai Food: Why Quality Matters at Thong Thai Bistro

When guests dine at Thong Thai Bistro, they often see the final dish arriving at the table — but behind every plate is an enormous amount of preparation, discipline, and hard work happening quietly in the kitchen every day.

Long before service begins, the kitchen is already active. Fresh herbs are cleaned and prepared, vegetables are carefully selected and cut, seafood is inspected and cleaned, curry pastes are made from scratch, and sauces are slowly balanced to achieve the depth and authenticity that Southern Thai cuisine is known for.

For Chef June, quality is non-negotiable.

Every ingredient that enters the kitchen is carefully checked. From seafood to vegetables, anything that does not meet her standards is discarded. Freshness is essential because authentic Thai cooking depends heavily on the quality of ingredients used. Without freshness, the flavours simply cannot develop properly.

Naturally, this commitment also affects cost.

At Thong Thai Bistro, we understand that our prices may be higher than many casual Thai restaurants or chain concepts in Singapore. We are not positioned as a budget restaurant, and we recognise that our style of dining may not suit every budget.

However, our pricing reflects the reality of preparing food properly — using fresh ingredients, maintaining strict quality control, and investing significant time into preparation without relying on shortcuts or pre-made products.

We believe guests deserve transparency. Great ingredients, careful preparation, and authentic cooking methods come at a cost, but they are also what create the depth, freshness, and balance that define the food we proudly serve.

At Thong Thai Bistro, our goal has never been to be the cheapest Thai restaurant. Our focus is simply to serve authentic Southern Thai food with honesty, consistency, and care.

Inside Chef June’s Kitchen: Where Everything Starts from Scratch

Inside Chef June’s Kitchen: Where Everything Starts from Scratch

At Thong Thai Bistro, the kitchen is the true heart of the restaurant. Behind every curry, soup, stir-fry, and sauce is a process built on discipline, freshness, and traditional Southern Thai cooking methods.

Chef June strongly believes that authentic Thai food cannot be created using shortcuts. That is why almost everything in the kitchen starts from scratch. Curry pastes are freshly prepared, sauces are carefully balanced, soups are slowly developed, and ingredients are selected daily to maintain quality and consistency.

For many guests, the flavours may feel comforting and home-cooked — and that is exactly the intention.

But behind those comforting flavours is also a kitchen run with extremely high standards.

Although Chef June was never formally trained in culinary school or under celebrity chefs, she runs her kitchen with remarkable precision and discipline. Freshness, cleanliness, flavour balance, preparation methods, and timing are constantly monitored. If a dish does not meet her expectations, it does not leave the kitchen.

Her cooking style comes from years of experience preparing food at home in Southern Thailand, where meals are made with patience, instinct, and deep respect for ingredients. Rather than following commercial shortcuts, she remains committed to traditional methods that preserve the authenticity and soul of Thai cooking.

At Thong Thai Bistro, we believe that great food begins long before it reaches the dining table. It begins in the kitchen — with hard work, consistency, and a commitment to doing things properly from the very beginning.

The Art of a Good Pad Thai

The Art of a Good Pad Thai

Pad Thai is one of Thailand’s most recognised dishes around the world, but creating a truly good Pad Thai is far more difficult than many people realise. While it may appear simple, the dish relies heavily on balance, timing, and careful preparation.

At Thong Thai Bistro, Pad Thai is prepared fresh to order using traditional methods and carefully selected ingredients. Every component plays an important role in creating the final flavour profile. The tamarind brings a gentle tanginess, balanced by subtle sweetness, savoury depth, and the light smokiness that comes from proper wok cooking.

For Chef June, balance is everything.

A good Pad Thai should never feel overly sweet, oily, or heavy. Instead, it should be fragrant, comforting, and layered with flavours that work harmoniously together. The noodles should absorb the sauce naturally while still maintaining their texture, and the wok heat must be carefully controlled to achieve the slight smoky aroma that defines authentic Thai stir-fried noodles.

Like many dishes at Thong Thai Bistro, our Pad Thai reflects Chef June’s philosophy of cooking — honest food prepared from scratch with patience, detail, and respect for traditional Thai flavours.

Although Pad Thai is widely available, authentic versions made with proper balance and fresh ingredients are becoming increasingly rare.

At Thong Thai Bistro, we remain committed to preparing it the traditional way.

Ice-Cold Beers and Authentic Thai Food: The Perfect Pairing

Ice-Cold Beers and Authentic Thai Food: The Perfect Pairing

At Thong Thai Bistro, great food is only part of the experience. Sometimes, the perfect meal comes together with something simple — an ice-cold beer enjoyed alongside bold and authentic Southern Thai flavours 🍺

Southern Thai cuisine is known for its rich curries, aromatic herbs, spicy dishes, and deep layers of flavour. With food this vibrant, a properly chilled beer becomes the perfect companion. It cools the palate, complements the spices, and creates a relaxed and enjoyable dining experience.

We take our beers seriously too. From frozen beer glasses to perfectly chilled bottles, every detail matters. Whether you are enjoying a spicy Tom Yum soup, tamarind prawns, basil squid, or yellow curry crab, a cold beer helps bring balance to the meal.

To make things even better, we also offer our popular Buy 2 Beers, Get 1 Free promotion 🍻 It’s a simple way for friends, families, and colleagues to unwind, share conversations, and enjoy good food together.

At Thong Thai Bistro, we believe dining should feel comfortable, welcoming, and fun. Great Thai food, cold beers, and warm hospitality — sometimes that is all you really need after a long day.

Chef June: A Self-Taught Chef Guided by Tradition and Heart

Chef June: A Self-Taught Chef Guided by Tradition and Heart

At Thong Thai Bistro, many guests are surprised to learn that Chef June was never formally trained as a chef.

She did not attend culinary school, work under famous chefs, or spend years climbing through commercial kitchens. In fact, everything she knows about cooking comes from family traditions, memory, and years of preparing authentic Southern Thai food at home.

And somehow, that has become her greatest strength.

Because Chef June was never shaped by commercial kitchen systems, her cooking remains deeply personal, traditional, and honest. She cooks the way food is prepared in homes across Southern Thailand — with patience, instinct, balance, and respect for ingredients.

Every curry paste, sauce, soup, and stir-fry is carefully prepared from scratch. There are no shortcuts, no ready-made pastes, and no artificial methods to speed things up. Instead, every dish is slowly built layer by layer to achieve the depth and complexity that authentic Thai food is known for.

Even simple dishes receive extraordinary attention to detail. Take our pineapple fried rice for example. Chef June does not simply add pineapple as a topping — she carefully cooks the rice so the sweetness and fragrance of the pineapple naturally infuse into every bite.

To Chef June, cooking is not just about recipes. It is about emotion, memory, and creating food that feels genuine and alive.

At Thong Thai Bistro, we believe that authenticity cannot always be taught in schools. Sometimes, it comes from experience, heritage, and cooking with heart.

The Art of Authentic Tom Yum Soup

The Art of Authentic Tom Yum Soup

Few Thai dishes are as iconic and beloved as Tom Yum soup. Known for its bold balance of spicy, sour, savoury, and aromatic flavours, Tom Yum represents the heart of authentic Thai cooking. At Thong Thai Bistro, this dish is one of the clearest reflections of our commitment to freshness and traditional Southern Thai flavours.

We serve both versions of Tom Yum — the traditional clear broth and the richer creamy style. The clear Tom Yum is lighter, sharper, and highly aromatic, allowing the natural flavours of the herbs and seafood to stand out beautifully. The creamy version adds evaporated milk, creating a smoother and richer finish while still maintaining the signature spicy and tangy character that makes Tom Yum so addictive.

What truly defines our Tom Yum, however, is the preparation behind it.

Chef June does not rely on ready-made soup bases or commercial pastes. Every pot starts from scratch using fresh lemongrass, galangal, kaffir lime leaves, chillies, lime juice, and carefully balanced seasonings. The broth is slowly developed to create depth, fragrance, and complexity.

Seafood quality is equally important. After restaurant hours, Chef June and Indi often personally source seafood themselves, carefully selecting only the freshest prawns, squid, and seafood suitable for our kitchen. Freshness is never compromised.

At Thong Thai Bistro, Tom Yum is not simply a soup — it is a reflection of authentic Thai cooking built on freshness, patience, and balance.

Finding Your Perfect Spice Level at Thong Thai Bistro

Finding Your Perfect Spice Level at Thong Thai Bistro

One of the most exciting things about Thai food is its bold and vibrant flavours — and of course, the spice 🌶️ At Thong Thai Bistro, we understand that every guest has a different level of comfort when it comes to heat, which is why we offer four different spice levels for many of our dishes.

Our goal is simple: to allow everyone to enjoy authentic Southern Thai cuisine in a way that suits their personal preference.

1. Bare Minimum

For guests who prefer almost no spice at all. This level keeps the flavours gentle while still allowing the herbs and ingredients to shine.

2. Less Spicy

A mild level with a small touch of heat, perfect for diners who enjoy flavourful food without intense spice.

3. Regular Spicy

This is the traditional spice level commonly enjoyed in Thailand. Balanced, bold, and full of character.

4. Extra Spicy

Created for true spice lovers who want the full intensity of Southern Thai flavours and heat 🔥

Southern Thai cuisine is famous for its rich spices, fresh herbs, and powerful flavours. However, we believe Thai food should remain enjoyable and approachable for everyone, whether you are new to Thai cuisine or someone who enjoys very spicy food.

At Thong Thai Bistro, the experience is always about balance, flavour, and enjoying Thai food your way.

Discovering Unexpected Wines: A Hidden Gem from China

Discovering Unexpected Wines: A Hidden Gem from China

At Thong Thai Bistro, food may be at the heart of what we do, but our passion for wine has also become an important part of the dining experience. Over time, we have carefully built a collection of more than 200 bottles, including red wines, white wines, champagne, and prosecco from different parts of the world.

Recently, one bottle surprised all of us.

Last Friday, we had the opportunity to taste a premium wine from China — and it was exceptional. Smooth, balanced, elegant, and full of character, it challenged many expectations of what Chinese wine could be. In fact, it has quickly become one of the most talked-about bottles in our collection.

Interestingly, it is also one of our most premium bottles, priced at $165. Yet after tasting it, we completely understood why. The wine paired beautifully with the bold, rich flavours of Southern Thai cuisine, creating a dining experience that was both unique and memorable.

At the moment, only three bottles remain in our collection.

At Thong Thai Bistro, we enjoy discovering wines that surprise people and complement authentic Thai flavours in unexpected ways. Sometimes the best discoveries come from the places you least expect.
