When a dish arrives at your table, it can look deceptively simple.

You see the finished plate.

Recently, a guest left us a review that really made us stop and think.

He said that, compared with every other Thai restaurant he had visited abroad, Thong Thai Bistro stood far above the rest, and that he felt our dishes genuinely reached Michelin-star standards.

We certainly didn’t ask him to say that.

And we don’t claim to be a Michelin-starred restaurant.

But his words made us think about something we don’t talk about often enough:

Would she be happy serving this to her own family?

If the answer isn’t yes, it doesn’t go out.

That standard can make the kitchen very demanding.

We carefully select our seafood.

Ingredients that don’t meet our standards are not simply used because they are already purchased.

Sometimes that means throwing something away.

From a business perspective, that’s painful.

From Chef June’s perspective, serving something she doesn’t believe is good enough is worse.

We choose the second option.

Take our minced chicken.

It would obviously be easier to buy minced chicken.

Instead, we buy boneless chicken legs and mince them ourselves.

Why?

Because Chef June wants to know exactly what is going into the dish.

The same philosophy applies to our sauces, pastes and preparations.

Where we can prepare something ourselves, we do.

Where freshness matters, we prioritise it.

And when an order comes into the kitchen, the food is prepared for that guest rather than simply being reheated from a large batch prepared earlier.

Southern Thai Food Is About Flavour, Not Just Chilli

Authentic Southern Thai food has a reputation for being spicy.

But good Thai food isn’t simply about how much chilli you can tolerate.

At Thong Thai Bistro, we want the flavours to come through.

Some want Bare Minimum.

Some prefer Less Spicy.
