When a dish arrives at your table, it can look deceptively simple.

You see the finished plate.

But what you don’t see is everything that happened before that plate reached you.

Recently, a guest left us a review that really made us stop and think.

He said that, compared with every other Thai restaurant he had visited abroad, Thong Thai Bistro stood far above the rest, and that he felt our dishes genuinely reached Michelin-star standards.

We certainly didn’t ask him to say that.

And we don’t claim to be a Michelin-starred restaurant.

But his words made us think about something we don’t talk about often enough:

The enormous amount of work that happens behind the scenes.

The Guest Sees the Dish. Chef June Sees Everything.

Chef June is extremely particular.

For her, cooking isn’t simply about following a recipe and putting food on a plate.

She looks at the ingredients first.

Is the seafood fresh enough?

Are the vegetables good enough?

Are the herbs right?

Is the preparation correct?

Has the sauce been made properly?

Is the cooking time right?

And most importantly:

Would she be happy serving this to her own family?

If the answer isn’t yes, it doesn’t go out.

That standard can make the kitchen very demanding.

Sometimes, perhaps, too demanding! 😂

But that’s Chef June.

Freshness Is Not Something We Can Fake

One of the biggest differences between what happens behind the scenes and what guests see is the amount of attention given to ingredients.

We carefully select our seafood.

Vegetables are checked.

Ingredients that don’t meet our standards are not simply used because they are already purchased.

Sometimes that means throwing something away.

From a business perspective, that’s painful.

From Chef June’s perspective, serving something she doesn’t believe is good enough is worse.

We choose the second option.

Even the Small Things Matter

Take our minced chicken.

It would obviously be easier to buy minced chicken.

Instead, we buy boneless chicken legs and mince them ourselves.

Why?

Because Chef June wants to know exactly what is going into the dish.

The same philosophy applies to our sauces, pastes and preparations.

Where we can prepare something ourselves, we do.

Where freshness matters, we prioritise it.

And when an order comes into the kitchen, the food is prepared for that guest rather than simply being reheated from a large batch prepared earlier.

Southern Thai Food Is About Flavour, Not Just Chilli

Authentic Southern Thai food has a reputation for being spicy.

But good Thai food isn’t simply about how much chilli you can tolerate.

At Thong Thai Bistro, we want the flavours to come through.

That’s also why Chef June asks guests how spicy they would like their food.

Some want Bare Minimum.

Some prefer Less Spicy.

Others want Regular Spicy.

And then there are those who happily choose Extra Spicy. 🌶️😂

The goal is not to make someone suffer.

The goal is to let them enjoy the food.

The Dining Room Is Only the Final Stage

By the time a dish reaches the table, much of the work has already happened.

Behind that plate are ingredient selections, preparation, sauces, marinades, cooking techniques, timing and Chef June’s constant checking.

Then there is the front of house.

That’s where Indi comes in.

While Chef June is making sure the food is right, Indi is making sure the guests are comfortable.

Sometimes perhaps a little too comfortable, because Indi has never met a guest he couldn’t talk to. 😂

But that’s part of our family approach.

Chef June takes care of the food.

Indi takes care of the people.

And somewhere in between, we try to make the whole experience work.

We Are Still a Family Restaurant

We aren’t a huge restaurant group with a large corporate structure behind us.

We are a family.

That means every compliment feels personal.

Every complaint feels personal.

And every plate leaving the kitchen carries a little bit of our reputation with it.

When someone tells us they enjoyed the food, we’re happy.

When someone tells us they came back because they remembered a particular dish, we’re even happier.

And when someone tells us they feel our food reaches an exceptionally high standard, we are genuinely grateful.

But we also know that compliments create responsibility.

If someone thinks we are doing something special, we have to keep working to deserve that opinion.

“Michelin-Star Standards” Is a Compliment — Not a Claim

We want to be clear about something.

Thong Thai Bistro is not a Michelin-starred restaurant, and we would never suggest otherwise.

Tyler’s comment was his personal assessment of the food, and we are extremely grateful that he felt so strongly about his experience.

For us, the important part isn’t the Michelin reference.

It’s the recognition of the effort behind the food.

Because that effort is real.

The kitchen is demanding.

Chef June doesn’t simply take a pre-prepared Tom Yum base and heat it up.

She starts each order properly, adding the ingredients that create the distinctive hot, sour and aromatic flavour.

Jumbo Prawns in Tamarind Sauce

Fresh seafood is one of our priorities.

Our Jumbo Prawns in Tamarind Sauce combine carefully selected prawns with Chef June’s tamarind sauce.

It has become one of the dishes our guests talk about most.

Pad Thai

Chef June personally prepares our Pad Thai sauce.

She has also developed her own method of preparing the noodles so that they absorb the flavour without becoming excessively oily.

Mango Sticky Rice

If you have room for dessert, this is one of our signatures.

Chef June is extremely particular about the mangoes.

If the mangoes aren’t sweet enough, we don’t serve Mango Sticky Rice that day.

We would rather disappoint someone by not having it than serve a mango that doesn’t meet her standard.
