But there is a reason we continue to do it.

But we don’t believe that reducing the character of a dish simply to make it easier is the answer.

Our Atmosphere Wasn’t Designed. It Came From Our Story.

Starting Again After COVID

When we returned from Thailand after COVID, we were starting almost from scratch.

We had three children.

We had no work.

And we had to figure out how to rebuild our lives in Singapore.

It wasn’t an easy period.

We didn’t have the resources to create a large, beautifully designed restaurant with an expensive interior.

So we made do with what we had.

And we started working.

Chef June volunteered to take charge of the kitchen.

Her motivation was simple: we needed to put food on the table for our children, rebuild our lives and become useful members of the community again.

That’s how Thong Thai Bistro began its journey.


No Fancy Designer. No Pretence.

We didn’t bring in an expensive restaurant designer to tell us what our restaurant should look like.

We simply created a place where people could sit comfortably, enjoy good food and have a conversation.

There is something quite liberating about that.

We don’t pretend to be something we’re not.

Our restaurant is simple.

Our food is real.

And our hospitality is personal.

Indi enjoys spending time with guests, learning about their favourite flavours, spice preferences, and any dietary requirements before recommending dishes that suit them. Whether someone prefers milder flavours, loves seafood, follows a vegetarian diet, or has specific dietary needs, we help curate a meal that fits the individual rather than expecting the guest to navigate the menu alone.

Behind every recommendation is Chef June‘s authentic Southern Thai cooking. Her recipes come from her parents and grandparents, preserving the flavours she grew up with in Southern Thailand. These are not recipes developed for commercial kitchens—they are family recipes prepared with care and respect for tradition.

Fresh ingredients are equally important. Our vegetables are delivered daily to maintain quality, even though this means paying additional delivery charges because our order size does not always meet the supplier’s minimum value. We make the same commitment to seafood, sourcing it carefully and refusing to compromise on freshness. If we are not satisfied with the quality, we simply do not serve it.
