Chef June is extremely particular about freshness.
Vegetables are delivered fresh, seafood is carefully selected, and ingredients that don’t meet our standards simply don’t belong in the kitchen.
This can sometimes make life difficult for us.
But we would rather have a difficult kitchen than compromise on the food.
Because we believe:
Fresh ingredients + freshly cooked food = an explosion of flavour.
There is no shortcut around that.
Why Freshly Cooked Matters
At Thong Thai Bistro, our dishes are cooked to order.
That means we don’t want to prepare large quantities of food in advance simply to make service faster.
When an order reaches the kitchen, Chef June prepares the dish.
This approach requires more work.
It can also mean that during busy periods, guests may have to wait longer than they would at a restaurant using more pre-prepared components.
But there is a reason we continue to do it.
We believe food tastes better when it is prepared fresh.
The ingredients retain their character, the flavours are properly developed, and the dish reaches the table when it is meant to be eaten.
For us, speed should never automatically come before quality.
Southern Thai Food and Seafood
Being in Singapore, we are particularly passionate about seafood.
Southern Thailand has a strong relationship with the sea, and seafood naturally plays an important role in our menu.
At Thong Thai Bistro, we carefully select the seafood we serve because freshness is critical.
From prawns and squid to fish and crab, seafood needs to be handled properly and cooked with care.

And Southern Thai home cooking has its own character.
Chef June doesn’t cook by trying to copy what another restaurant is doing.
She cooks according to the flavours and methods she knows.
That is what makes the food personal.
We Don’t Want to Make Thai Food More Commercial
There is always a temptation for restaurants to make food as broadly appealing as possible.
Reduce the spice.
Simplify the flavours.
Use shortcuts.
Prepare more in advance.
Make everything taste familiar.
We understand why restaurants do this.
But that’s not what we want to build at Thong Thai Bistro.
We want diners to experience something genuine.
That doesn’t mean every dish has to be extremely spicy.
In fact, we offer different spice levels because we understand that everyone has a different tolerance.
But we don’t believe that reducing the character of a dish simply to make it easier is the answer.
Instead, we try to preserve the flavour, balance and character of the food while allowing guests to choose the level of spice that suits them.
Traditional Does Not Mean Complicated for the Diner
One misconception about traditional cooking is that it has to be difficult for the person eating it.
It doesn’t.
Our job is to do the hard work in the kitchen.
The diner simply has to sit down and enjoy the food.
That’s why we put so much attention into preparation.
Chef June checks the ingredients.
She prepares the sauces and pastes.
She cooks each dish to order.
She tastes and adjusts.
And she has very little patience for ingredients that aren’t good enough. 😄

We don’t claim that Thong Thai Bistro represents every style of Thai cooking.
That would be impossible.
Thailand is a country with an enormous culinary heritage.
What we can say is that our food represents the Southern Thai flavours that Chef June knows and loves.
Our recipes come from her background.
Our cooking reflects her preferences and standards.
Our seafood is selected carefully.
Our ingredients are chosen with freshness in mind.
And our dishes are prepared to order.
That is our version of authenticity.

Good food is important.
But we don’t believe a restaurant experience ends with the food.
This is where Indi comes in. 😂
While Chef June is busy making sure the food meets her standards, Indi is usually somewhere around the restaurant talking to guests, recommending dishes, discussing food and generally making himself at home.
We like to think of it as our own combination:
Chef June handles the food.
Indi handles the people.
Or, as we sometimes joke, Indi is the restaurant’s Welcome Relations Officer — with a tendency to become the Over-Welcome Relations Officer. 😆
We believe genuine hospitality should be part of the experience.
