At Thong Thai Bistro, one thing many guests notice is that the restaurant feels personal, relaxed, and genuinely human. That is because for us, the restaurant is not simply a business β it is a large part of our daily life and family journey.
One reason we enjoy running the restaurant is because it rarely feels like βwork.β
Indi has never believed in scripted hospitality or formal service lines. He prefers speaking to guests naturally, sharing stories, joking around, and treating diners the same way he would treat friends visiting his home. Over the years, he realised people often remember warmth, sincerity, and genuine human connection far more than perfectly rehearsed service.
Chef June is completely different inside the kitchen π
While Indi enjoys conversations outside, Chef June runs the kitchen with intense focus and precision. She is a perfectionist when it comes to flavour, balance, freshness, texture, and presentation. Every curry, sauce, stir-fry, seafood dish, and dessert must meet her standards before leaving the kitchen.
Even small details matter deeply to her β when herbs are added, how long sauces are reduced, the texture of sticky rice, or whether seafood is fresh enough for service.
Sometimes this creates a funny balance inside the restaurant: relaxed hospitality outside and serious concentration inside the kitchen.
But perhaps that combination is exactly what makes Thong Thai Bistro feel warm, personal, and authentic.
At the end of the day, we simply enjoy what we do β and we believe guests can feel that when they dine with us.
