Our goal is simple: to allow everyone to enjoy authentic Southern Thai cuisine in a way that suits their personal preference.

1. Bare Minimum

For guests who prefer almost no spice at all. This level keeps the flavours gentle while still allowing the herbs and ingredients to shine.

2. Less Spicy

A mild level with a small touch of heat, perfect for diners who enjoy flavourful food without intense spice.

3. Regular Spicy

This is the traditional spice level commonly enjoyed in Thailand. Balanced, bold, and full of character.

4. Extra Spicy

Created for true spice lovers who want the full intensity of Southern Thai flavours and heat 🔥

At Thong Thai Bistro, food may be at the heart of what we do, but our passion for wine has also become an important part of the dining experience. Over time, we have carefully built a collection of more than 200 bottles, including red wines, white wines, champagne, and prosecco from different parts of the world.

Recently, one bottle surprised all of us.

Last Friday, we had the opportunity to taste a premium wine from China — and it was exceptional. Smooth, balanced, elegant, and full of character, it challenged many expectations of what Chinese wine could be. In fact, it has quickly become one of the most talked-about bottles in our collection.

Interestingly, it is also one of our most premium bottles, priced at $165. Yet after tasting it, we completely understood why. The wine paired beautifully with the bold, rich flavours of Southern Thai cuisine, creating a dining experience that was both unique and memorable.

At the moment, only three bottles remain in our collection.

Compared to other regions of Thailand, Southern Thai food is often more intense and aromatic. The dishes typically feature a stronger balance of spicy, sour, salty, and savoury flavours, creating meals that are vibrant and full of depth. Fresh herbs, fragrant spices, coconut milk, and seafood play an important role in many Southern Thai dishes.

Chef June remains deeply committed to preserving these traditional flavours. Many of our curry pastes and sauces are prepared fresh in-house, without shortcuts, allowing every dish to reflect the authenticity of home-style Southern Thai cooking.

For us, Southern Thai food is not simply about heat or spice — it is about balance, freshness, and complexity in every bite. It is a cuisine built on tradition, care, and generations of cooking knowledge.

More Than a Restaurant: Our Family’s Journey

Thong Thai Bistro is more than just a restaurant to us — it is our family’s story.

After returning from Thailand during Covid, life changed very quickly. Like many families during that difficult period, we had to find a way to rebuild and provide for our children. What started as a small effort to put food on the table slowly became Thong Thai Bistro.

Neither Chef June nor Indi came from a traditional restaurant background. Chef June never worked in a commercial kitchen, and Indi had no formal hospitality training. Everything we know has been learned through experience, hard work, and determination.

Chef June cooks from memory, family traditions, and years of home-style Southern Thai cooking. Indi manages the front of house the best he can, making sure guests feel welcomed and looked after. Together, we simply try our best every day.

As a family-run restaurant, we know we are not perfect. Sometimes our children are around, and sometimes the environment may feel less polished than larger establishments. But what we hope guests feel is sincerity, warmth, and honest hospitality.

We may still be growing, but every dish and every table comes from genuine effort, heart, and the desire to create something meaningful for our family and our guests.

Authentic Thai Green Curry: Why It’s Not Thick

At Thong Thai Bistro, we often find that certain Thai dishes come with expectations shaped by what diners are used to — and green curry is one of them.

In many restaurants outside Thailand, green curry is served thick and heavy. However, in its traditional form — especially in Southern Thailand — green curry is meant to be lighter and more fluid. When prepared using pure coconut milk, it naturally has a thinner consistency.

To achieve the thicker texture many diners expect, some kitchens add flour or other thickeners. While this creates a richer, heavier gravy, it also alters the flavour and reduces the role of coconut milk.

At Thong Thai Bistro, Chef June prepares green curry the traditional way — using fresh curry paste and real coconut milk, without any artificial thickeners. The result is a dish that is clean, aromatic, and true to its roots.

We understand that food preferences vary, and authenticity can sometimes feel unfamiliar. But for us, staying true to traditional flavours and techniques is what defines our cooking and the experience we offer.

To her, cooking is never guesswork. It is precise and intentional, almost like a science. Every ingredient, every step, and every moment matters — from when herbs are added to how long a curry is reduced.

She keeps a quiet presence, but her food speaks volumes. Those who have tasted it know there is something genuine and deeply authentic in every bite.
