As a family-run restaurant, we believe hospitality should feel genuine rather than formal. Chef June focuses on preparing authentic Southern Thai food using fresh ingredients, while Indi focuses on making guests feel at home from the moment they walk through the door.
For us, great dining is not just about what is on the plate. It is about the entire experience — good food, good company, and a welcoming atmosphere that encourages guests to stay a little longer.

She’s meticulous, demanding (in the best way 😄), and won’t let a dish leave the kitchen unless it meets her standard.
And yes, the “boss” you met is Indi. What started as a couple sharing food and dreams has now turned into a family journey — three kids later, they’re still humming along, laughing loudly, arguing about seasoning, and doing what they love every single day. Indi takes care of the front, chats with guests, makes recommendations, and keeps the energy alive, while June quietly holds the fort in the kitchen, making sure every plate tastes just like the last — consistency is her obsession.
Together, they balance each other out — flavour and fun, discipline and laughter — and that’s really the heart of Thong Thai Bistro.
Our Squid in Fresh Lemon Sauce is indeed one of the most technical dishes on the menu at Thong Thai Bistro. It looks simple, but timing is everything. A few seconds too early and the squid is undercooked. A few seconds too late and it turns tough. The window is very small — and that precision is what makes the texture just right: lightly crisp on the outside, tender and soft inside.
Beyond timing, the balance of the fresh lemon sauce is equally important. It must be bright and refreshing without overpowering the natural sweetness of the seafood. Chef June went through many, many trials before perfecting it.
What makes it even more special is that Chef June was never trained in a commercial kitchen. She did not learn under another chef. All her recipes come from her family — refined through experience, instinct, and repetition. Every dish carries that personal touch and heart.

Jumbo Prawns in Tamarind Sauce
Our Jumbo Prawns in Tamarind Sauce is truly one of the stars of the menu at Thong Thai Bistro. We don’t use small prawns — only properly sized jumbo ones that are fresh, firm, and naturally sweet. The texture is important to us. When cooked correctly, the prawn should be juicy with a slight bite, never mushy or overdone.
The real magic, however, is in Chef June’s tamarind sauce. It’s not just sweet or sour — it’s layered. You get the tanginess of tamarind, a gentle caramelised sweetness, a touch of savoury depth, and just enough heat to balance everything. The sauce is reduced carefully so it clings beautifully to every prawn.
It’s one of those dishes that looks simple but requires precision — especially with seafood. Timing is everything. Too long in the wok and the prawn loses its natural sweetness. Chef June is very strict about this.

Indi is always having a great time — laughing a little too loudly, enjoying the vibe, and occasionally annoying Chef June when his laughter echoes all the way into the kitchen 😂.
Meanwhile, Chef June is fully locked in — tasting, adjusting, tasting again — making sure every single plate tastes exactly the same as last week. No shortcuts, no excuses. She firmly believes consistency is the real secret to success.
Indi’s philosophy? If he consistently enjoys himself, he’ll consistently love his job — and hopefully that joy spills over to every table in the restaurant 😄🍽️.

At Thong Thai Bistro, we keep our dessert menu focused and intentional, offering three traditional Thai desserts, each done properly and never rushed.
🍋 Mango Sticky Rice
With the number of kind comments we receive, we can confidently say this is one of the best mango sticky rice experiences in Singapore. Chef June has perfected the balance — fragrant glutinous rice, rich coconut cream, and mangoes that must be naturally sweet. In fact, the only time this dessert is not available is when the mangoes don’t meet her standards. No shortcuts, ever.
🌰 Durian Sticky Rice
A bold contender that proudly stands shoulder-to-shoulder with our mango version. The durian pudding is made using carefully selected, high-quality durians chosen for both aroma and texture. It’s rich, creamy, and unapologetically indulgent — a favourite among true durian lovers.
💎 Red Ruby (Tub Tim Grob)
Perhaps the most demanding dessert in our kitchen. Every bowl is prepared fresh to order, with water chestnuts coated and cooked only when an order comes in to preserve that signature crunch. It’s labour-intensive, but Chef June insists — if it’s not fresh, it doesn’t go out. The result is a striking, refreshing dessert that leaves you wanting another spoonful.
