At a Thai restaurant, many people naturally expect to be greeted by someone Thai. Instead, they are welcomed by a Sikh man with a full turban and beard confidently recommending Southern Thai dishes and explaining spice levels.
But what surprises guests even more is how familiar Indi is with Thai food.
Indi has been serving Thai seafood and Thai cuisine since 2012, spending years learning ingredients, flavours, seafood preparation, spice balance, and traditional Thai cooking styles. Over time, he developed a deep understanding of how authentic Thai food should taste and how to guide diners through the menu.
At Thong Thai Bistro, service is not scripted or overly formal. Indi simply enjoys speaking with guests, recommending dishes, adjusting spice levels, and helping diners feel comfortable β especially those trying Southern Thai food for the first time.
